FARIDA'S COOKING CORNER




Hello, my fine, fellow foodies! Today I bring you a wonderful dish from Burkina Faso: Riz Gras au Poulet, aka Fat Rice with Chicken. 
Despite its name, this popular Burkinabe dish is actually quite healthy, consisting of tomatoes, garlic, eggplants, carrots, and cabbage. This hearty dish can be served on its own, or you can do as the Burkinians do, and add okra sauce for an extra kick.

Total Time: 45mins
   Prep Time: 10mins
   Cook Time: 35mins 

Ingredients:
  • 2 tomatoes, chopped
  • 2 large garlic cloves 
  • 1 small, white, cabbage, 
  • quartered vegetable oil 
  • 300g rice, washed and drained 
  • 750ml water 
  • 1 chicken, jointed and cut into serving-sized pieces 
  • 2 aubergines (eggplants), 
  • 3 diced carrots,  
  • 1 Maggi chicken bouillon cube 
  • 2 onions

Directions:

  • Heat the oil in a large pot.
  •  Add the chicken pieces and fry for about 15 minutes or until nicely browned all over
  •  Add the tomato, rice, garlic, aubergine, onions and water 
  • Bring to a simmer and cook for 20 minutes 
  • Add the Maggi bouillon cube, cabbage and carrots
  •  Bring back to a simmer and cook for 10 minutes, or until the vegetables and chicken are tender and the sauce has thickened.
