FARIDA'S COOKING CORNER

So today, my fellow foodies, I bring you a popular dish from Benin: Beninese Peanut Sauce. This is a traditional Beninese dish flavored with onions, chillies, tomatoes and, of course, peanut butter. Yum!

To make this dish into a meal, you can serve it with sweet potatoes, brown/white rice, cous-cous, or quinoa. It also goes great alongside grilled chicken, fish, or beef.

Total Time: 25mins
   Prep Time: 10mins
   Cook Time: 15mins

Ingredients:

  • 3 tablespoons of red palm oil
  • 2 tablespoons of tomato paste
  • 1/2-1 teaspoon habanero pepper, minced
  • 1/2 teaspoon of salt
  • 1 beef bouillon cubes or 1 teaspoon beef bouillon powder (*can substitute with beef broth)
  • 1 cup of water, more if needed
  • 1/2 cup no sugar added peanut butter
  • 1/2 cup of diced onion

Directions:

  • Heat the palm oil in a pan, then add the tomato paste, habanero, salt, onion and bouillon
  • Cook for two or three minutes, then add the peanut butter and the water
  • Bring to a boil, reduce heat and simmer for 10 or 15 minutes

Not only is this dish delicious, but  it's also extremely easy to make; but don't just take my word for it, try it out for yourself.

Stay tuned for next month as I bring you a new and fun dish as I continue to cook my way through Africa!!!
