CONGOLESE CUISINE

Food is awesome. But you know whats more awesome? Congolese food!. if you don't know any Congolese people and want to taste our cuisine here are two popular dishes.

 Madesu (Beans)
· Red or white beans
· Oil
· Onions(diced)
· Tomato paste
· Smoked Fish (optional)

First, you wash the beans and you put them in a pot to boil ,until they are tender. If you're using fish, you'll place the fish into water\; wash it; cut it into small pieces; and then place it in the same pot as the tenderized beans. Add oil, onion, and tomato paste .Make sure to lower the heat to simmer...unless you want to end up with burned madesu.

Pondu-

· Cassava leaves
· Onions(diced)
· Leek(diced)
· Palm Oil
· Smoked fish (or any other fish you'd like)
· Green Onions

After washing the cassava leaves, you need to pound them until they are tender, and then place them into a pot of water. Cut the fish into very small pieces and place it, along with diced onions and green onions into the pot.Bring to a boil and then add palm oil. Let let that boil. This should take roughly 2 hours to be safe, since if it is under-cooked it could be lethal. There are other ways to cook this dish, below is a video of how another person prepares pondu. Enjoy!
