FARIDA'S COOKING CORNER: BOTSWANA BBQ



Nothing says Summer like warm weather, beach days, and BBQ. I recently stumbled upon a fun and easy African take on traditional American BBQ, inspired by the lovely people of Botswana.



Total Time: 30 mins
   Prep Time: 5 mins
   Cook Time: 25 mins

Ingredients:

BBQ -
  • 4 good quality beef steaks (about 300g each)
  •  2 Maggi cubes
  •  4 tbsp soya oil (can substitute with canola or vegetable or olive oil)
  •  2 tsp barbecue spice blend 



BBQ Spice Rub -
  • 4 tbsp sea salt 
  • 1 tbsp freshly-ground black pepper 
  • 1 tbsp paprika 
  • 2 tsp cayenne pepper 
  • 2 tsp dried oregano
  •  crumbled 2 tsp granulated garlic 
  • 1 tsp ground cumin 
  • 1 tsp ground alligator pepper (optional)

Directions:
  •  In a bowl, work together the oil, Maggi cubes and barbecue spices to a smooth paste
  • Smear this mixture over the meat then set aside to marinate as you heat your barbecue 
  • When the barbecue is hot, add the meat and cook for about 10 minutes per side, or until done to your lining
