I am very excited to share with you my latest dessert recipe for two very important reasons:
1) I finally found a dessert I can actually make
2) I now have an assistant, two actually. Yes, you read that right, I have two assistants; well at least for today.
South African Melkert (milk tart) is one of the most beloved and popular dessert recipes around, not to mention one of the easiest. This dish compliments any meal and is great for parties.
Total Time: 45 mins
Prep Time: 15 mins
Cook Time: 30 mins
Pastry -
- 2 tbsp butter - no margarine
- 2 tbsp sugar
- 1 egg
- 3/4 cup of self rising flour
- pinch of salt
- ground cinnamon ( can sprinkle on top of dessert)
Filling -
- 2 cups of milk
- 2 eggs, separated
- 1/2 cup of sugar
- 1/4 cup of cake flour
- 1/4 cup of corn flour
- pinch of salt
- 2 tbsp of butter
- 1 tsp vanilla extract
- Preheat oven to 180 degrees
- Add all the ingredients together in a food processor or an electric beater until all clumps form a dough
- Place into a lightly greased tart dish
- Chill in the fridge while preparing the filling
- Heat the milk in a medium pot (do not boil)
- Beat the yolks and sugar until creamy & light
- Add the flours & salt ( the mixture will be fairly thick)
- Add some warm milk to the egg mixture and place into the pot
- Bring to a boil and whisk until thickened
- Remove from the heat & whisk in the butter and vanilla
- Whisk the egg whites in a bowl and pour into the custard
- Pour filling into the chilled pastry case & sprinkle with cinnamon
- Place in oven
